Roasted Cauliflower Steaks
Marinated cauliflower steaks coated in a chickpea flour breading and baked until crispy.

01Trim the stem and remove the leaves from the cauliflower heads, keeping the stem intact. 2. Cut the cauliflower lengthwise through the center into 1.5-inch thick steaks. 3. Boil or steam the cauliflower in salted water 4-5 minutes to soften, then set aside. 4. Mix the oil, soy sauce, balsamic vinegar, maple syrup, cumin, smoked paprika, salt, and pepper for the marinade. 5. Preheat the oven to 410 degrees F (210 C) and line a baking sheet with parchment paper. 6. Mix all breading ingredients in a bowl. 7. Place the steaks on the sheet and brush with marinade on all sides. 8. Dip the steaks in the breading, coat all sides, and spray with cooking spray. 9. Bake 25-30 minutes until golden and fork-tender, flipping after 15-20 minutes. 10. Serve with fresh herbs, lemon juice, and a dip.
