Roasted Maple-Mustard Tofu Sheet Pan
A balanced sheet pan dinner with roasted maple-mustard tofu, Brussels sprouts, and carrots served over quinoa.

01Preheat the oven to 400°F. 2. Toss the cubed tofu, Brussels sprouts, and carrots with olive oil, salt, and pepper. 3. Spread everything evenly on a sheet pan. 4. Whisk together the mustard, maple syrup, apple cider vinegar, soy sauce, and paprika. Drizzle over the sheet pan and toss to coat. 5. Roast for 20 – 25 minutes, stirring once, until the tofu is golden and the vegetables are tender. 6. Serve over top of cooked quinoa.
