Vegan Vegetable Soup
Plant-based vegetable soup with potatoes, zucchini and frozen vegetables in a crushed tomato broth.

01In a large pot, heat olive oil and saute onions and garlic for about 5 minutes until translucent. 2. Add carrots, celery and potatoes and saute for an additional 5 minutes. 3. Add spices, tomatoes, vegetable broth, water and frozen veggies to the pot, cover and bring to a boil. 4. Simmer for 20 minutes, stirring occasionally, and serve.
