Chickpea Tofu
Soy-free tofu made by simmering chickpea flour batter until set, or from soaked dried chickpeas.

01Whisk the chickpea flour with 1 cup of water. 2. Bring 1.5 cups of water to a boil in a saucepan, then slowly pour in the chickpea mixture while stirring constantly. 3. Simmer on low at least 5-6 minutes, whisking frequently, until very thick. 4. Pour into a 6x6-inch mold and let it firm up, refrigerating for a firmer result. 5. Unmold and use as you would regular tofu. 6. Alternatively, soak dried chickpeas overnight, blend with water, strain, simmer the liquid about 20 minutes while stirring, and set in molds for a silken-style tofu.
