Vegan Sushi
Homemade vegetable sushi rolls with seasoned rice, avocado, and crisp veggies wrapped in nori.

01Rinse the sushi rice until the water runs clear, soak 20-30 minutes, drain, and add fresh water. 2. Bring to a simmer, cover, and cook on low 12-15 minutes; rest covered 10 more minutes. 3. Heat the rice vinegar with sugar and salt until dissolved, pour over the rice in a large bowl, and mix well. 4. Cut the vegetables into sticks. 5. Place a nori sheet on a sushi mat, spread rice with moistened fingers leaving a border at the bottom, and lay vegetable strips in rows, optionally with vegan cream cheese. 6. Roll up tightly with the mat and seal the edge with water. 7. Cut into pieces and repeat with remaining ingredients. 8. Serve with soy sauce, wasabi, and pickled ginger.
