Vegan Apple Muffins (Dessert)

    Grind the oats and shredded coconut separately into flour. 2. Mix all crumble ingredients in a small bowl with a fork and set aside. 3. Peel and chop the apples into small pieces. 4. Make vegan buttermilk by mixing the plant-based milk with vinegar and aquafaba. 5. Line or grease a muffin tin and preheat the oven to 375 degrees F (190 degrees C). 6. Mix the dry ingredients, add the wet ingredients, and stir until just combined. 7. Fill the muffin cups two-thirds full, press about a tablespoon of apple pieces into each, and top with streusel. 8. Bake about 25 minutes until a toothpick comes out almost clean, cool completely, then drizzle with the icing.
