Warm Potato Asparagus Salad

    Bring a pot with the 2-3 cups water to boil. Add the gold potatoes to a steamer basket and steam until fork tender, 15-20 minutes. Alternatively, use the steam option on the Instantpot. In a separate pot, use a similar method to steam the asparagus until fork-tender, approximately 5-10 minutes. (See Note) While the potatoes and asparagus are steaming, make the dressing. Whisk together all ingredients or combine in a small food processor. Taste and adjust as needed, adding more water, lemon juice, maple syrup, or seasoning (if needed). To serve, combine the potatoes, asparagus, cherry tomatoes, and greens in a large bowl and toss with the dressing to combine. Enjoy!
