Healthy Lemon Blueberry Bread

Lemon blueberry quick bread made with whole wheat pastry flour, oat flour, Greek yogurt and honey.

    Preheat oven to 350 degrees F and prepare a greased 9x5 baking dish. 2. In a large bowl mix whole wheat pastry flour, oat flour, baking powder, baking soda, cinnamon and ginger. 3. In a separate bowl mix lemon zest, melted coconut oil, egg, egg white, vanilla extract, honey, yogurt, lemon juice and milk. 4. Combine the wet and dry ingredients. 5. Slowly fold in blueberries with a spatula. 6. Pour batter into a greased 9x5 or 8x4 loaf pan and bake for 35-40 minutes until cooked through in the middle; an 8x4 pan may take 5-10 minutes longer. The bread should be golden brown and a toothpick should come out clean when inserted into the center.
