Sheet Pan Breakfast

Sheet pan breakfast of eggs baked in bell pepper rings with roasted sweet potatoes and broccoli.

    Preheat the oven to 400 degrees F and prepare a parchment lined sheet pan. 2. Chop sweet potatoes and broccoli. 3. Toss sweet potatoes with half of the olive oil until coated. 4. Add potatoes to the sheet pan and bake for 10 minutes. 5. While potatoes bake, remove the top and seeds from the pepper and slice into 0.5 inch thick rings, and toss broccoli in the remaining olive oil. 6. After the potatoes have cooked for 10 minutes, reduce heat to 350 and add broccoli and pepper rings to the pan; cook for 5 minutes. 7. Mix together salt, pepper, garlic powder and onion powder. 8. Crack eggs into the pepper rings, sprinkle everything with the spice mixture and return to the oven for 5-7 minutes, until the eggs are cooked to your liking.
