Healthy Peppermint Mocha Muffins

Whole wheat chocolate muffins flavored with peppermint, coffee and maple syrup.

    Preheat oven to 400 degrees F and prepare a greased or lined muffin tin. 2. Mix together almond milk, egg, yogurt, peppermint extract, and maple syrup; stir to combine. 3. Fold in flour, cocoa powder, coffee, baking soda, baking powder and chocolate chips. 4. Pour batter into the muffin tins, filling 3/4 of the way. 5. Bake for 12-15 minutes until a toothpick comes out clean when inserted in the center. 6. When muffins come out of the oven, immediately sprinkle with crushed candy canes; do not bake with candy canes on top or they will melt.
