Healthy Zucchini Bread

Oat flour zucchini bread sweetened with honey and studded with mini chocolate chips.

    Preheat oven to 350 degrees F and prepare a greased 8x4 loaf pan. 2. In a large bowl mix together olive oil, egg, vanilla extract, honey, almond milk and zucchini. 3. Stir dry ingredients (oat flour, spices, baking powder, baking soda and salt) into wet ingredients. 4. Fold in mini chocolate chips. 5. Pour batter into the greased loaf pan and top with additional chocolate chips if desired. 6. Bake at 350 for 40-45 minutes, or until the top is golden and a cake tester comes out clean. Allow the bread to cool for at least 20 minutes before removing from the pan.
