Banana Breakfast Cookies
Flourless breakfast cookies made with mashed banana, oats, chia seeds, and chocolate chips.

01Preheat the oven to 350 degrees F and line a baking sheet with parchment paper. 2. Mash the bananas until smooth, then stir in the coconut oil and egg. 3. Add all remaining ingredients and let the batter sit for 5 minutes so the chia seeds bind. 4. Scoop tablespoons of dough, form into cookies, and press flat since they will not spread. 5. Bake at 350 degrees F for 10-15 minutes until lightly browned on the edges. 6. Cool and store in an airtight container in the refrigerator.
