Healthy Carrot Muffins
Oat flour carrot muffins with crushed pineapple, honey, and warm spices.

01Preheat the oven to 400 degrees F and prepare a greased or lined muffin tin. 2. Whisk together the eggs, honey, and melted coconut oil until smooth. 3. Stir in the grated carrots and drained pineapple. 4. Add the oat flour, baking powder, baking soda, and spices and stir until combined; the batter will be slightly thick. 5. Pour a third cup of batter into each muffin cup. 6. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
