Cheddar Parsley Pancakes

01Blend the cottage cheese, oats, eggs, water, black pepper, and salt on high for 30 seconds until smooth. 2. Pour the batter into a large bowl and fold in the cheddar cheese, parsley, and squash flowers if using. 3. Preheat a griddle or nonstick pan over medium heat, about 350 degrees F. 4. Scoop quarter-cup portions of batter into the hot pan. 5. Cook 2 minutes per side until golden brown. 6. Serve topped with extra parsley and cheddar if desired.
