Oat Flour Pancakes

Fluffy pancakes made from blended and sifted oat flour with Greek yogurt and maple syrup.

    Blend the oats on high for 60 seconds to create oat flour. 2. Sift the oat flour with a fine mesh strainer to remove clumps and oat shells. 3. Whisk together the oat flour, baking powder, cinnamon, baking soda, and salt in a large bowl. 4. In a separate bowl, whisk together the milk, yogurt, eggs, olive oil, maple syrup, vanilla, and apple cider vinegar. 5. Add the wet ingredients to the dry and whisk for about a minute until there are no clumps. 6. Rest the batter for 5 minutes and preheat a lightly buttered pan or griddle over medium heat. 7. Pour a quarter cup of batter per pancake and cook 90 seconds per side until golden brown. 8. Repeat with the remaining batter and serve with your favorite toppings.
