Greek Chicken Cauliflower Rice Bowls
Herb-seared chicken over cauliflower rice with olives, artichokes, and cherry tomatoes.

01Heat olive oil in a large pan and season the chicken with half the thyme, rosemary, oregano, pepper, and salt. 2. Sear the chicken for 6-7 minutes on each side until golden brown, then remove and set aside. 3. Add the cherry tomatoes to the hot oil and saute for 5-6 minutes until soft. 4. Add the cauliflower rice, artichoke hearts, olives, and remaining spices; stir and saute for 3-4 minutes on low heat. 5. Divide the cauliflower rice into bowls, slice the chicken, and place on top.
