Healthy Stir Fry Shrimp

Shrimp and vegetable stir fry in a honey lime coconut aminos sauce over brown rice.

    Heat avocado oil in a pan over medium high heat and lightly season the shrimp with salt and pepper. 2. Cook your rice per package directions. 3. Sear the shrimp for 1-2 minutes on each side until lightly browned, then remove from the pan. 4. Saute the onions and carrots for 3-5 minutes. 5. Add the zucchini, mushrooms, and sugar snap peas and cook 2-3 minutes; mix the stir fry sauce while the veggies cook. 6. Add the sauce to the pan, stir to coat, and return the shrimp; toss until coated. 7. Serve over brown rice or cauliflower rice and garnish with sesame seeds or green onions.
