Healthy Cauliflower Fried Rice

Vegetable-loaded cauliflower fried rice with eggs, peas, and a sesame coconut aminos sauce.

    Heat olive oil in a pan and saute the onions and garlic for 5 minutes. 2. Add the peppers and carrots and saute for an additional 5 minutes until they start to soften. 3. Add the cauliflower rice and thawed green peas and saute for 5 more minutes. 4. Push the veggies to one side of the pan. 5. Whisk the eggs and scramble them on the empty side of the pan, about 1-2 minutes. 6. Stir the eggs into the veggie mixture. 7. Add the pepper, ginger, red pepper flakes, toasted sesame oil, rice vinegar, and coconut aminos and stir over low heat until warm. 8. Serve with sesame seeds or chopped scallions.
