Healthy Chicken Lettuce Wraps
Asian-style chicken lettuce wraps with water chestnuts, broccoli, and a soy dipping sauce.

01Thinly slice the green onions, separating whites and greens. 2. Cut chicken tenders into 1 inch chunks and pulse in a food processor with shredded carrot, green onion whites, soy sauce, rice vinegar, sesame oil, pepper, ginger, and chili flakes until in small pieces. 3. Preheat a large skillet or wok over medium high heat with olive oil. 4. Add the chicken mixture, broccoli, water chestnuts, onion, and garlic; spread around the pan and sear without stirring for 2-3 minutes. 5. Continue cooking, breaking the chicken into small pieces, until cooked through, about 8 minutes. 6. Stir in the green onion tops. 7. Whisk together the dipping sauce ingredients. 8. Spoon the chicken mixture onto lettuce leaves, top with sesame seeds and shredded cabbage, and serve with dipping sauce.
