Pesto Chicken Zucchini Noodles

    Heat olive oil in a large saute pan over medium high heat. 2. Cook the cubed chicken for 10-12 minutes until golden brown, stirring occasionally. 3. While the chicken cooks, halve the tomatoes, spiralize the zucchini, and chop the garlic and herbs. 4. Remove the browned chicken and set aside. 5. Saute the garlic until fragrant, about 1 minute. 6. Stir in the cherry tomatoes, basil, parsley, pepper, and salt and saute for 5 minutes until soft. 7. Stir in the pesto and return the chicken to the pan. 8. Toss in the zucchini noodles and saute for 1-2 minutes until they start to soften. 9. Serve warm.
