Dutch Oven Whole Chicken Dinner

Whole chicken roasted in a Dutch oven over seasoned carrots, potatoes, and onions.

    Preheat the oven to 350 degrees F. 2. Discard gizzards and pat the chicken dry. 3. Coat the bottom of the Dutch oven with olive oil. 4. Cube carrots and potatoes and add to the Dutch oven. 5. Add halved onion and garlic. 6. Mix the spices and evenly coat the chicken; place it on top of the vegetables with legs upright. 7. Cover and bake at 350 degrees F for 2 hours, removing the lid for the last 15 minutes to brown the top. 8. Slice the chicken and serve with the vegetables.
