Healthy Potato Soup
Blended potato soup with carrots, celery, rosemary and milk.

01In a large pot, heat olive oil, add onions, carrots and celery and saute for 5 minutes. 2. Add potatoes, broth, garlic powder, rosemary, salt and pepper (do not add milk). 3. Cover the pot and bring to a boil, then reduce to a simmer for 30 minutes or until the potatoes are fork tender, stirring every few minutes. 4. Stir in room temperature milk. 5. Blend with an immersion blender or regular blender. 6. Serve with your favorite toppings like bacon, chives or cheese.
