Beef Vegetable Soup
Beef stew meat simmered with potatoes, carrots and mixed frozen vegetables in a tomato beef broth.

01Preheat your pot on medium heat for at least 5 minutes. 2. Add olive oil and sear the stew meat until browned on all sides, about 10 minutes. 3. Add onions, garlic, carrots and celery and cook an additional 3-5 minutes until gently softened. 4. Stir in potatoes, spices, broth and canned tomatoes. 5. Bring to a boil, reduce to a simmer and cook on medium low heat with the lid partially on for about 25 minutes. 6. Remove bay leaves, stir in frozen veggies and enjoy.
