Chicken and Stars Soup
Comforting rotisserie chicken soup with vegetables and tiny star pasta.

01Chop all the vegetables. 2. In a large pot, heat olive oil and saute the carrots, celery, onion, and garlic 5-10 minutes until fragrant and softened. 3. Stir in the broth, cooked chicken, dried spices, and Parmesan rind; cover, bring to a boil, then reduce the heat and simmer over low-medium heat at least 5-10 minutes. 4. Add the pasta and cook for half the package-recommended time, then immediately remove from the heat, or cook the pasta separately and add it at the end. 5. Remove and discard the bay leaves and Parmesan rind. 6. Stir and serve, adding extra broth if you prefer a brothier soup.
