Pasta Fagioli Recipe
Italian pasta and bean soup with cannellini beans, tomato sauce, and ditalini.

01In a large pot, heat the olive oil over medium heat. 2. Saute the onions, garlic, and carrots 5 minutes until the onions are translucent and softened. 3. Add the beans, tomato sauce, basil, parsley, oregano, black pepper, red pepper, vegetable broth, and water; stir. 4. Cover the pot, turn the heat to high, and bring the soup to a boil, stirring occasionally, about 10 minutes. 5. Once boiling, remove the lid and reduce the heat to medium. 6. Add the dry pasta and cook over medium heat for half the package-recommended time, keeping the pasta undercooked. 7. Discard the bay leaf before serving.
