German Cucumber Salad
Chilled cucumber salad in a creamy dill and garlic dairy-free yogurt dressing.

01Add the sliced cucumbers to a large bowl, season with about 3/4 tsp salt, rest 20 minutes, then squeeze and drain the excess liquid. 2. In a medium bowl combine the vegan yogurt, garlic, sugar, vinegar, dill, salt, and pepper; adjust seasonings to taste. 3. Pour the dressing over the cucumbers, add the sliced onion, and stir. 4. Refrigerate at least 30 minutes before serving.
