Millet Fritters

    Heat 1 tbsp oil in a skillet, fry the diced onion and minced garlic 4-5 minutes over medium heat. 2. Rinse the millet, add it to the onion mixture, and stir about 2 minutes. 3. Add the vegetable broth and cook covered on low heat until absorbed, about 20 minutes. 4. Meanwhile, make the flax eggs by mixing the ground flax seeds with 5 tbsp water; rest 5 minutes. 5. Combine the starch, flax eggs, corn, peas, and cooled millet in a bowl and mix with your hands until it holds together. 6. Form round patties with slightly wet hands. 7. Heat 1 tbsp oil in a skillet and fry the patties in batches on medium heat until golden brown on both sides. 8. For the sauce, blend all pea sauce ingredients, transfer to a saucepan, bring to a boil, and simmer 1 minute until thick and creamy. 9. Serve the fritters with the sauce and mashed potatoes, pasta, or rice.
