Vegan Lasagna Roll Ups
Lasagna noodles rolled around a hummus, mushroom, and spinach filling, baked in marinara with vegan cheese.

01Cook the lasagna noodles in boiling salted water until al dente. 2. Ladle about half a cup of marinara sauce into the bottom of a baking dish. 3. While the noodles cook, heat oil in a pan over medium heat and saute the onion, garlic, and mushrooms about 4 minutes; add the soy sauce and spinach and cook 30-60 seconds more. 4. Stir in the hummus. 5. Season with cumin, paprika, salt, pepper, and lemon juice to taste. 6. Drain the noodles and preheat the oven to 360 degrees F (180 C). 7. Spread about a quarter cup of filling on each noodle, roll up, and place seam-side down in the dish. 8. Ladle the remaining marinara over the rolls and top with vegan cheese. 9. Bake 20-25 minutes and garnish with vegan Parmesan.
