Caramelized Onion Tart
Savory tart with a flax-almond crust filled with caramelized onions, peppers, and leek.

01Mix the ground flax seeds with 5 tablespoons of water and set aside 5 minutes. 2. Combine all pie crust ingredients in a bowl and mix until the dough sticks together. 3. Press the dough into a greased 8-inch tart dish and up the sides; refrigerate. 4. Whisk the chickpea flour, cornstarch, spices, and water or broth in a bowl and set aside. 5. Heat oil in a pan over low-medium heat and cook the onion, leek, and bell pepper covered 15-20 minutes until lightly caramelized, stirring in the garlic near the end; preheat the oven to 390 degrees F (200 C). 6. Add the chickpea flour mixture, stirring immediately, then add the plant-based milk and tamari. 7. Simmer a few minutes until thickened, then pour the filling into the crust and smooth it out. 8. Optionally top with vegan cheese and fried onion rings. 9. Bake about 25-30 minutes until nicely browned.
