Vegan White Bean Soup
Creamy white bean soup with potatoes, carrot, celery, and optional kale.

01Chop the potatoes, celery, and carrot and mince the garlic. 2. Heat oil in a large pot over medium heat, add the garlic, veggies, potatoes, and spices, and saute about one minute. 3. Pour in the vegetable broth, add the bay leaves, and bring the soup to a boil. 4. Simmer about 10 minutes, then add the white beans and coconut milk and simmer a further 5-10 minutes. 5. Pour part of the soup into another pot, remove the bay leaves, and blend until smooth. 6. Return the blended soup to the pot and stir; adjust seasoning. 7. Garnish with fresh herbs and serve with bread or toast.
