Vegan Mushroom Stroganoff
Creamy mushroom stroganoff in a plant-based cream sauce served over rice or pasta.

01Heat oil in a large pan, fry the onion about 5 minutes, then add the garlic and fry 1 more minute. 2. Add the mushrooms and fry over medium heat about 5 minutes. 3. Pour in the white wine, vegetable broth, tamari, and the spice mixture with optional nutritional yeast; bring to a boil. 4. Dissolve the cornstarch in the plant-based milk or cream. 5. Pour the milk mixture into the pan and cook on low-medium heat about 10 minutes until the sauce thickens; adjust seasonings. 6. Add fresh thyme, parsley, or tarragon and serve with brown rice or pasta.
