Quinoa Pilaf

    Thoroughly rinse the quinoa in a fine-meshed sieve. 2. Add the quinoa, water, salt, and turmeric to a pot, bring to a boil, cover, and simmer on low about 15 minutes until tender. 3. Meanwhile, heat the oil in a skillet over medium-high heat and fry the cumin seeds and chili. 4. Add the onion and saute 3 minutes, then add ginger, garlic, all vegetables, salt, pepper, and the bay leaf. 5. Add the vegetable broth, cover, and cook the vegetables over low-medium heat 7-10 minutes until tender. 6. Turn off the heat, add the cooked quinoa and lemon juice, and stir. 7. Garnish with fresh herbs and serve.
