Quick gluten-free flatbread made with dairy-free yogurt and cooked in a skillet.

01Combine the flour, baking powder, and salt in a bowl. 2. Add warm water, yogurt, olive oil, and aquafaba; stir, then knead into a soft, pliable dough. 3. Divide the dough into 4 portions and dust the work surface with tapioca flour. 4. Preheat a skillet over high heat and roll out each dough ball. 5. Cook each flatbread covered over medium-high heat a few minutes until bubbles form, flip, and cook a few more minutes; keep finished breads covered with a towel. 6. Serve warm brushed with oil or vegan butter, minced garlic, salt, and fresh herbs.
