Curried Cauliflower Casserole

    Chop the cauliflower into bite-sized florets, boil in salted water about 10 minutes until fork-tender, then drain. 2. Preheat the oven to 360 degrees F (180 C); in an oven-safe dish combine the chopped tomatoes, garlic, ginger, and all spices, then stir in the cooked cauliflower. 3. Whisk all cream ingredients in a bowl and pour over the cauliflower. 4. Bake 10 minutes, stir, top with vegan cheese, and bake a further 10 minutes. 5. Serve with cooked rice or naan.
