Garlic Noodles
Noodles tossed with garlicky sauteed mushrooms, bell pepper, and vegan Parmesan.

01Cook noodles or pasta of choice per package directions until al dente. 2. Heat the olive oil in a skillet over medium heat, fry the garlic for 1 minute, then add the mushrooms and bell pepper. 3. Cook over low-medium heat for about 5 minutes, then stir in the soy sauce, vegetable umami, all spices, and scallions. 4. Simmer 1 more minute, then add the cooked noodles and stir to combine. 5. Taste and adjust seasonings. 6. Serve garnished with vegan Parmesan cheese.
