Vegan Cabbage Rolls
Napa cabbage leaves stuffed with seasoned rice and vegetables, pan-seared and served with a ginger-garlic sauce.

01Soak the sushi rice 45-60 minutes, drain, and cook with water and salt until tender, 10-12 minutes. 2. Boil the cabbage leaves in batches 2-3 minutes until softened, then cool in cold water. 3. Saute the onion, ginger, garlic, carrot, peppers, and mushrooms in oil 3-4 minutes; add the tamari and spices and cook 1-2 more minutes. 4. Stir the cooked rice into the skillet and adjust seasonings. 5. Place filling in the middle of each cabbage leaf, fold in the sides, and roll up. 6. Pan-sear the rolls in oil a few minutes per side until golden brown. 7. For the sauce, cook the ginger, garlic, tamari, rice vinegar, and maple syrup 1-2 minutes, add a cornstarch slurry and spices, and cook until thickened. 8. Pour the sauce over the rolls and garnish with sesame seeds.
