No-bake Cookie Dough Bars
No-bake chickpea cookie dough bars topped with a chocolate fudge layer.

01Optionally press a no-bake brownie base into a lined pan. 2. For the cookie dough layer, process the chickpeas, sunflower seed butter, and vanilla until smooth and creamy. 3. Add all other cookie dough ingredients except the chocolate chips and mix again, then stir in the chips. 4. Press the cookie dough mixture into the pan and freeze. 5. For the fudge layer, melt the cacao butter in a water bath, whisk in the remaining ingredients, and pour over the cookie dough layer. 6. Freeze about 60 minutes to set, then cut into bars. 7. Store in the fridge.
