Chickpea Nuggets

Baked or air-fried chickpea and broccoli nuggets with a crispy breadcrumb coating.

    Drain the chickpea can liquid into a bowl and set aside. 2. Boil the broccoli florets about 4 minutes, then drain well. 3. Pulse the broccoli, chickpeas, onion, garlic, and spices in a food processor about 8 times, then add the oat flour and pulse a few more times. 4. Shape the mixture into 16 nuggets. 5. Dip each nugget into the chickpea liquid and then the breadcrumbs. 6. Spray with cooking spray and air-fry 18 minutes at 380 degrees F flipping once, or bake about 25 minutes at 400 degrees F flipping once. 7. Serve with a dip of choice.
