Red Lentil Dahl
Creamy red lentil dahl with carrot, bell pepper, and coconut milk in curry spices.

01Rinse the lentils; chop the onion, garlic, ginger, bell pepper, and carrot. 2. Saute the onion in oil 3-4 minutes, then add the ginger, garlic, carrot, and bell pepper. 3. Add all spices, sweetener, lentils, and broth; bring to a boil and simmer about 10 minutes. 4. Add the coconut milk and cook a further 5 minutes to desired thickness. 5. Season with salt and pepper and serve warm with rice or naan, garnished with fresh herbs.
