Spicy Potato Noodles
Chewy hand-rolled potato noodles tossed in a sizzling garlic chili-sesame sauce.

01Peel, chop, and steam the potatoes about 20 minutes until tender, then mash completely lump-free. 2. While hot, mix in the starch, water, and salt and knead into a smooth dough. 3. Bring a large pot of water to a boil and prepare a bowl of cold water. 4. Divide the dough into 14-16 pieces and roll each into a 1/2-inch thick noodle. 5. Boil the noodles 4-5 minutes until they float, then transfer to the cold water and drain. 6. Place the noodles in a serving bowl with all remaining sauce ingredients on top. 7. Heat the sesame oil until hot and pour over the noodles, toss, and garnish with fresh herbs and sesame seeds.
