Vegan Baked Taquitos
Baked rolled tortillas stuffed with a creamy mashed potato, carrot, and pea filling.

01Peel, chop, and boil the potatoes until fork tender, about 12-15 minutes; drain and mash. 2. Saute the onion in oil for 3 minutes, then add the grated carrot, garlic, and all spices for a minute. 3. Pour in the vegetable broth, add the peas, cover, and cook until the carrot softens; turn off the heat. 4. Add the mashed potatoes and vegan cheese and combine; taste and adjust seasonings. 5. Preheat the oven to 410 degrees F and line a baking sheet. 6. Place 2-3 tablespoons of filling on each tortilla, roll tightly, and place seam-side down. 7. Brush with oil, sprinkle with taco seasoning, and bake 17-20 minutes until golden and crispy. 8. Serve with salsa, vegan sour cream, or guacamole.
