Vegan Quesadillas
Crispy tortillas filled with spiced black beans, corn, mushrooms, and vegan cheese sauce.

01Heat oil in a pan with the soy sauce, onion, garlic, pepper, and mushrooms and fry over medium heat 3-4 minutes. 2. Add the corn, black beans, and spice mix and fry a further 3-4 minutes. 3. Spread vegan cheese sauce in an even layer on one tortilla. 4. Add a layer of the veggie mixture and place another tortilla on top. 5. Cook in a lightly oiled skillet 2-3 minutes per side until browned and toasty. 6. Repeat with remaining tortillas, cut into quarters, and serve hot.
