Brown rice salad with crisp vegetables, olives, and a creamy vegan sour cream dressing.

01Soak the brown rice for about 15 minutes, then drain. 2. Bring the vegetable broth to a boil, add the rice, cover, and simmer 30-35 minutes; let sit covered 10 more minutes, then cool. 3. Chop all the vegetables. 4. Stir all dressing ingredients together, thinning with water if needed. 5. Combine the veggies and rice in a salad bowl, pour over the dressing, and serve.
