Glass Noodle Salad (Yum Woon Sen)
Thai glass noodle salad with crisp vegetables, peanuts, and a tangy ginger-lime dressing.

01Soak the glass noodles in hot water for 4-5 minutes until clear, then drain well. 2. Julienne the cucumber and carrot, slice the pepper and cabbage, and chop the scallions, peanuts, and cilantro. 3. Whisk all dressing ingredients together in a jar. 4. Combine the drained noodles and vegetables in a large bowl, add the dressing, and toss. 5. Garnish with sesame seeds and serve.
