One-Pan Mexican Rice
Baked one-pan Mexican-style rice with black beans, corn, vegetables, and smoky spices.

01Preheat the oven to 400 degrees F (200 degrees C); rinse and drain the canned beans and corn, dice the onion, bell pepper, and zucchini, slice the olives, and mince the garlic. 2. Combine all the ingredients in a casserole dish, stir well to ensure the rice is evenly covered, and bake covered with a lid for 40 minutes, or until the rice is tender. 3. Top with the vegan cheese sauce and fresh cilantro or parsley.
