Best Vegan Alfredo Sauce
Creamy dairy-free Alfredo sauce blended from cauliflower and hemp seeds, served over pasta with sauteed mushrooms.

01Cut the cauliflower into florets and cook in salted water for 10-15 minutes until fork-tender, then drain. 2. In another pot cook pasta of choice per package instructions. 3. While the cauliflower and pasta cook, slice the mushrooms and finely mince the garlic. 4. Heat 1 tsp of oil in a skillet and fry the garlic over medium heat for 2-3 minutes until lightly browned. 5. Add the garlic, drained cauliflower, and all other ingredients except the pasta, mushrooms, and fresh herbs to a high-speed blender. 6. Blend on high for 1-2 minutes until smooth and creamy, then adjust seasonings to taste. 7. Heat another 1 tsp of oil in the skillet and saute the mushrooms for 3-5 minutes over medium heat with a pinch of salt and pepper. 8. Pour the Alfredo sauce over the cooked pasta. 9. Add the mushrooms and garnish with fresh herbs.
