Vegan Gravy Recipe (Sauce)

Savory dairy-free mushroom gravy thickened with cornstarch and flavored with fresh herbs and soy sauce.

    Add the dried mushrooms and vegetable broth to a large pot, bring to a boil, cook about 1 minute, then set aside. 2. Finely dice the onion and mince the garlic and fresh herbs. 3. Heat the oil in a large skillet over medium heat, saute the onion for 2-3 minutes, then add the garlic, herbs, and seasonings and saute another minute, stirring frequently. 4. In a small bowl, whisk the plant-based milk and cornstarch until lump-free. 5. Deglaze the skillet with the soy sauce and optional red wine, scraping up any bits from the bottom of the pan. 6. Pour in the mushroom and broth mixture, stir, then stir in the cornstarch milk mixture and let the gravy simmer and thicken for about 5 minutes. 7. Blend with an immersion blender or stand blender until smooth. 8. Adjust thickness with more broth or a cornstarch slurry, then taste and adjust seasonings.
