Strawberry Mousse Recipe (Dessert)
Light vegan strawberry mousse made with silken tofu and whipped aquafaba.

01Add chopped and hulled strawberries to a saucepan, stir in agar powder and maple syrup, bring to a boil and simmer for about 3 minutes on low to medium heat, then quickly add the mixture to a blender. 2. Process the silken tofu, the strawberry mixture, and the vanilla extract in the blender until completely smooth and creamy; set aside but leave the mixture in the blender. 3. Pour 1/4 cup of aquafaba into a clean, grease-free mixing bowl and whip with an electric hand mixer for about 5 minutes. 4. Add the lime juice and whip for a further 1-2 minutes until the aquafaba is stiff. 5. Blend the strawberry mixture again for a few seconds, then fold the whipped aquafaba into it until just combined. 6. Pour into clean glass jars and refrigerate until set, a few hours or overnight.
