Vegan Hash Browns (Breakfast)

Crispy pan-fried shredded potato hash browns bound with rice flour and flax.

    Combine the ground flax and water in a small bowl and set aside. 2. Shred the potatoes and onion using a box grater or food processor. 3. Squeeze the shredded potato in a nut milk bag or kitchen towel to remove excess liquid, reserving the liquid. 4. Combine the potato with the remaining ingredients in a large bowl, mixing well. 5. Pour off the top of the reserved liquid and add the settled starch to the mixture. 6. Heat 1-2 tablespoons of oil in a large skillet over medium-low heat. 7. Form small portions about a quarter-inch thick and fry 6-8 minutes per side until golden brown and crispy, pressing with a spatula and working in batches.
