Vegan Blueberry Muffins (Dessert)
Vegan blueberry muffins made with oat flour and a vegan buttermilk base.

01Preheat the oven to 360 degrees F (180 degrees C) and line or grease a muffin pan. 2. Stir the plant-based milk and lemon juice together and set aside a few minutes to make vegan buttermilk. 3. Whisk all dry ingredients in a large bowl. 4. Add the wet ingredients and stir until just combined, then fold in the blueberries. 5. Divide the batter among about 8 muffin cups. 6. Bake 25-30 minutes until cracks form and a toothpick comes out fairly clean. 7. Cool before serving.
